In trying to improve my diet, I want to eat more fish. Salmon is okay, but it is kind of bland. From reading online, I plan to check out monkfish, sheepshead, Alaskan pollock, and cod. I love all shellfish...

Stouffers has these good frozen fish dishes that are stuffed with shrimp, spinach, other stuff that are pretty awesome and fairly low cal.

My vote would be Wahoo from the grill but few things beat a cold beer and fried white perch fillets. Can't go wrong with Yellowfin Tuna.
Farm raised tilapia might be almost as bad for you as bacon.

I pretty much hate most fish, but I can tolerate Orange Roughy. I'll also eat a shark and sword fish steak from time to time.
I'm partial to Grouper for ocean fish and Walleye for freshwater fish.
I will judge people based on how they answer this question.

Cod is way more bland than Salmon. But grilled Salmon prepared with lemon, white wine and butter.....up there!
It's not the fish though, it's the preparation. Having said that sushi or blackened....anything in the Tuna family probably top my list.
And shellfish should be a completely different category. I just noticed the OP threw that in at the end as if 'fish' and 'shellfish' belong in the same conversation. If you ask what "seafood" is the best, well then you'd go pretty far down before you got to an actual FISH.
Walleye is a great answer but tough to find around here. I love Rockfish if it's cooked right.
And by snapper, I mean vagina.

Best when super fresh. I target catching most of the top 6 fish when I get an opportunity, Caught 12 fish on Thursday 5 Snapper,and 7 Grouper. Ate the Snapper last night. Blackened. It was awesome.

Just cooked fried hogfish sandwiches and grilled cobia for my Dad and Grandfather today. All shot by my speargun within the past 2 months.
My favorites are hogfish, scamp grouper, cobia, mahi. Secondary favorites are flounder, tautog, snapper, gag grouper.
There are a few different kinds of grouper I usually shoot and I rank them like this..
Scamp, Gag, Red
There are some fish I either haven't had or haven't had enough of...Wahoo, African Pompano, Permit. Swordfish and Mako shark are both pretty good.
I love fish, but it really depends on how I plan to eat it...
I know it is cliche...but I want cod for fish and chips...it just flakes perfectly within the crust...
If I am grilling, I really like swordfish...
But at a restaurant, I am usually a grouper man...
But when I visit redneck country in VA, I love native trout...so delicious...
