As far as soundtrack vs. score; I'd have to throw my original choice in both lists.
Soundtracks alone is a tough one to pick but one that would go in my top 10 is "Fast Times at Ridgemont High" just on the Led Zeppelin song alone.
"The Water Boy" was another good one.

Of course "The Wedding Singer"
Because I'm a big Bob Marley fan I'll throw in "I Am Legend"
Shaft is the correct answer. Jimmy Cliff is the only real contender.

Not GOAT, but A Life Less Ordinary has one of my most replayed soundtracks. Underrated movie, too.
Why are people immediately naming soundtracks when the OP asked about scores?
Listing both soundtracks AND scores is too broad and it's like apples and oranges.

Judgement Night soundtrack tops all.
Greatest movie and score.
Taxi Driver, just for how well it compliments everything in the movie. Also underrated, The Shining
Shawshank and Road to Perdition have great scores.
Basically anything Thomas Newman has touched.
I posted it, but couldn't believe I was the first one in the thread.
I've got a soft spot for The Social Network's score. Reznor needs to do more movies.
Trent Reznor's stuff in Social Network and Girl with the Dragon Tattoo is really awesome - the former would make a Top 5 list for me.
