I'm suprised at the mayo-hate, too. I despise it, but I usually feel like I'm one of the few.

Mayonnaise can be good - but the only real mayonnaise is the Dukes, everything else tastes like crap. You can make a good chicken salad with it. But never mix mayo with lobster - or get mayo in a sushi roll, the worst.

Mayo, if not overused, is a perfectly fine binding agent. Unfortunately, some places do overuse it and give it a bad name. In the right circumstances and proportions it is not significant enough to elicit "disgusting".

Also, delicious with pommes frites....
